Ingredients
  • 1 medium zucchini, sliced into thick rounds
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 1 cup mushrooms (optional, whole)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (parsley, thyme, or rosemary)
  • Wooden or metal skewers

    If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.

    Wash and cut the vegetables: slice zucchini into rounds, chop bell peppers and onion into chunks, and keep cherry tomatoes and mushrooms whole.

    Thread vegetables onto skewers, alternating types and colors.
