  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned oats
  • 1 cup raisins
  • Optional: (1/2 cup chopped walnuts or pecans, 1/2 tsp nutmeg)
Instructions
  1. 1
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. 2
In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes).
  3. 3
Beat in the eggs one at a time, then add vanilla extract.
  4. 4
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. 5
Gradually add the dry mixture into the wet mixture, mixing until just combined.
  6. 6
Stir in oats and raisins until evenly distributed. If using nuts or nutmeg, fold them in now.
  7. 7
Drop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
  8. 8
Bake for 10–12 minutes, until the edges are golden but the centers remain slightly soft.
  9. 9
Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
