This easy tofu stir fry is a healthy and flavorful dish made with crispy tofu, fresh vegetables, and a savory-sweet sauce. Ready in just 30 minutes, itβs perfect for busy weeknights and can be customized with your favorite vegetables.
Prepare the tofu: Drain and press tofu for 10β15 minutes. Cut into cubes. Toss with 2 tbsp soy sauce, then coat evenly with 1 tbsp cornstarch.
Cook the tofu: Heat 1 tbsp vegetable oil in a skillet or wok over medium-high heat. Cook tofu for 6β8 minutes, turning to crisp all sides. Remove from skillet and set aside.
Cook the vegetables: Add remaining oil to the skillet. Stir fry garlic and ginger for 30 seconds until fragrant. Add zucchini and carrot, cooking for 3β4 minutes until just tender.
